Ingredients:

• 2 tablespoons flour
• ¼ teaspoon black pepper
• ¼ teaspoon salt
• 1 teaspoon canola oil
• 4-ounce chicken breast
• 1 garlic (minced)
• Quartered mushrooms
• 1 tablespoon of diced onion
• 1/3 cup marsala wine

Preparation:

In a big bowl, mix the flour, black pepper and salt. Dredge both sides of the chicken in the flour mixture. Set the oven to medium heat and heat the canola oil. Fry the garlic and onion on a pan for 1 minute. Add the mushrooms then let them cook for 5 minutes. Push the mushrooms to one side of the pan, add the chicken then cook for 2-3 minutes. Burned steak with fried eggplant

Ingredients:

• 1 teaspoon olive oil
• Black pepper
• Salt
• ¼ cup red wine
• 1 garlic clove (chopped)
• 4-ounce skirt steak
• 1 medium eggplant (peeled and cubed)
• 1/3 cup onion (minced)
• ½ cup tomato (chopped)
• 1 tablespoon mint
• 1 tablespoon feta
• 1 tablespoon parsley

Preparation:

Mix together the garlic, olive oil, black pepper, salt and red wine. Pour the mixture over the whole steak and marinate for 20 minutes. Sprinkle some salt on the steak, place it in a colander lined with paper towel and put it aside to sit. Cooke each side of the steak in an oiled skillet for 2 minutes. Finish by taking it to a 360-degree oven for 10 minutes. Cover the eggplant with the paper towel and fry it in olive oil until it turns golden brown. Add onions and continue cooking for 2 minutes. Add tomatoes and cook for 2 more minutes. Finish by seasoning it with black pepper and salt. Remove it from heat then add mint, feta and parsley.
